The story can be found here.

What would you do?

Is your question, "what would we do if we were her with her beliefs," or "what are our beliefs and would we be able to take that oath," or are you asking in general, regardless of which oath, because some may argue, "let your yes be yes and your no be no"?

I can tell you what I did do on the opposite end of the spectrum, when courted to be a campus minister at a university that, I later discovered, required all of its faculty to sign a lifestyle covenant (morality contract). I didn't do it... and not because I wanted to do any of the things they restricted or wasn't willing to abstain from them during my employment.

I think what we answer with says more about us than what would be the right answer.

I think I probably share similar beliefs to the woman, so my answer is more in line with her actions, especially considering the subject matter she was teaching and the subject matter I hope to be teaching some day.

Oh, trust me, I am not worried about the right answer. I am worried about the right question.

(that was tongue in cheek, by the way)
